Angel CS31 Top-fermenting Dry Yeast - 12 g

Angel CS31 is an excellent dry yeast for top-fermenting beers with higher alcohol content. It possesses abundant esters and is excellently suited for the production of ales with a fruity aroma. This yeast belongs to var. diastaticus. It is a natural, non-GMO strain widely used in craft breweries.

Brewing Properties
Vigorous fermentation, high apparent attenuation, and medium flocculation. Fast start of fermentation, which can be completed in 5 - 7 days at 18 °C.

Application
Rehydrate the yeast in a disinfected container with 5 to 10 times its weight in boiled water or diluted wort (2:1 water to wort) at 22 - 30 °C. Stir lightly for 5 minutes to fully suspend the yeast and let it rest for 10 - 20 minutes. Adjust the temperature by adding wort (if the temperature difference is greater than 10 °C). Mix yeast and wort. The entire process should be limited to 30 minutes to reduce the risk of contamination. It is not necessary to aerate the wort to help the yeast achieve active growth.
