Angel CS31 top-fermenting dry yeast - 500 g

Angel CS31 is an excellent dry yeast for top-fermented beers with a higher alcohol content. It is rich in esters and is ideal for making ales with a fruity aroma. This yeast belongs to the var. Diastaticus. It is a natural, non-GMO strain that is widely used in craft breweries.

Brewing properties
Vigorous fermentation, high degree of final fermentation and medium flocculation. Fast start of fermentation, which can be finished in 5 - 7 days at 18 °C.

Application
Rehydrate the yeast in a disinfected container with 5 to 10 times the weight of boiled water or diluted wort (2: 1 water to wort) at 22 - 30 °C. Stir gently for 5 minutes to completely suspend the yeast and let sit for 10 - 20 minutes. Adjust the temperature by adding wort (if the temperature difference is greater than 10 °C). Mix yeast and wort. The entire process should be limited to 30 minutes to reduce the risk of contamination. It is not necessary to aerate the wort for the yeast to actively grow.

Fermentation temperature: 15 - 25 °C, ideally 18-22 °C.
