Angel CY115 Top-Fermenting Dry Yeast - 500 g

Angel CY115 is an excellent top-fermenting dry yeast. CY115 is an English ale yeast for producing ales with a light fruity aroma and bright body. It exhibits a slight ester and fruit aroma, such as tropical fruits. It is a natural, non-GMO strain widely used in craft breweries.

Brewing Characteristics
Vigorous fermentation, high attenuation, and medium to high flocculation. Fast start of fermentation, which can be completed in 3 - 4 days at 18 °C.

Application
Rehydrate the yeast in a sanitized container with 5 to 10 times its weight in boiled water or diluted wort (2:1 water to wort) at 22 - 30 °C. Stir lightly for 5 minutes to fully suspend the yeast and let it rest for 10 - 20 minutes. Adjust the temperature by adding wort (if the temperature difference is greater than 10 °C). Mix yeast and wort. The entire process should be limited to 30 minutes to reduce the risk of contamination. It is not necessary to aerate the wort to help the yeast achieve active growth.
