This prevents trub (suspended solids - tiny particles, e.g., proteins, fruit pulp, husks, or fermenting yeast cultures) floating on the wort from being bottled.
Trub can have a major influence on the taste, especially during fermentation and maturation, which is usually no longer desirable in the final product.
