This yeast also displays a piece of history. Isolated from a bottle of Schultheiss Berliner Weisse, this Brett Bruxellensis strain has an ester profile of pineapple and orchard fruit. It complements a traditional Berliner Weisse bouquet, as well as other mixed fermented sour beers.
