Angel CY115 top-fermenting dry yeast - 500 g

Angel CY115 is an excellent top-fermenting dry yeast. CY115 is an English brewer's yeast for making ales with a light fruit aroma and a light body. It shows a light ester and fruit aroma like tropical fruits. It is a natural, non-GMO strain that is widely used in craft breweries.

Brewing properties
Vigorous fermentation, high degree of final fermentation and medium to high flocculation. Fast start of fermentation, which can be finished in 3 - 4 days at 18 °C.

Application
Rehydrate the yeast in a disinfected container with 5 to 10 times the weight of boiled water or diluted wort (2 : 1 water to wort) at 22 - 30 °C. Stir gently for 5 minutes to completely suspend the yeast and let sit for 10 - 20 minutes. Adjust the temperature by adding wort (if the temperature difference is greater than 10 °C). Mix yeast and wort. The entire process should be limited to 30 minutes to reduce the risk of contamination. It is not necessary to aerate the wort for the yeast to actively grow.

Apparent final degree of fermentation: 75 - 85 %
Flocculation: high
Fermentation temperature: 15 - 25 °C, ideally 18 - 22 °C.
Alcohol tolerance: 10 %

Dosage
50 to 100 g / hl, increase the dosage to 100 to 300 g / hl under special fermentation conditions
